

Oolong Tea
Category : Tea with semi-oxidation, varying from 15% to 70% of oxidation.
Types : Tie Guan Yin and Rock teas of Fu Jian, Guang Dong Dan Cong and Taiwan Oolong.
Quantity : Use teapots of 100cc to 200cc and then fill 1/3 of it with tea leaves.
Brewing : Use 100℃ water to clean and heat the leaves first. Discard this water and use 90℃ to 100℃ water for susequent brews, depending on the degree of oxidation or pan-firing. Don't steep the tea.
